Recipes: Honey and Ginger King Prawns

Serves 4

You will need:

Olive Oil
225g fresh Tiger Prawns, Peeled
Mixed salad leaves
1 onion
2 cloves Garlic
1 inch piece of fresh ginger
110g Mushrooms.
250g Tomato based pasta sauce
2 tsps Boyne Valley Honey
Salt and Pepper.

Directions:

Finely chop the onion garlic and ginger
and slice the mushrooms.

Add olive oil to a hot frying pan and fry the onion,
garlic and ginger for 2 minutes until soft.

Add the prawns and mushrooms and continue cooking for
1-2 minutes until the prawns are pink. Stir in pasta sauce.

Add the honey and season with salt and black pepper.

Bring to the boil and serve with salad.
