Recipes: Honey Cucumber and Mint Salad

Serves 4-6

You will need:

4 tbsp Boyne Valley Honey
400 g thick Greek yoghurt
2 tbsp lime juice
4 tbsp mint freshly chopped
2 whole cucumbers, chopped
Mint leaves for decoration

Directions:

Add all of the ingredients to a bowl and mix together ensuring all of the cucumber is well coated with the dressing.

Place on serving dish and sprinkle with mint leaves.

Serve with chunky vegetable,
baked potato or Tuna.
