Recipes: Crispy Chicken with Honey Mustard Dipping Sauce

Serves 4:


Honey mustard Dipping Sauce
2 tbsp Boyne Valley Honey
2 tbsp Dijon mustard
2 tbsp olive oil

Crispy Chicken
4 Boneless chicken breasts
2 tbsp olive oil
2 tbsp grated parmesan cheese.
100g bread crumbs
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper


Preheat the oven to 200 degrees Celsius.

Grease a baking pan with a little olive oil.

Cut each of the chicken breasts into 4 lengthwise strips.

Place in a bowl. Add the olive oil and stir to coat all the chicken evenly.

In a bowl, stir together the Parmesan cheese, bread crumbs, oregano, salt and pepper.

Add the chicken strips and mix well together to coat with the crumb mixture.

Place on the baking pan and bake for 15 – 20 minutes, turning the strips once.

Cook until cooked through and nicely browned and crispy.

Whilst chicken is in the oven, prepare the honey mustard sauce.

In a food processor, blend the honey, Dijon mustard and olive oil until smooth.

Serve the Crispy Chicken hot with a small bowl of honey mustard dipping sauce.
